Vegetables play an important role in human nutrition. Most are low in fat and calories but are bulky and filling. They supply dietary fibre and are important sources of essential vitamins, minerals, and trace elements. Particularly important are the antioxidant vitamins A, C, and E. Eating vegetables provides many health benefits. People who eat more vegetables and fruits as part of an overall healthy diet are likely to have a reduced risk of some chronic diseases.
Aim for at least 400g (i.e. five portions) of fruit and vegetables per day, excluding potatoes, sweet potatoes, cassava and other starchy roots.
