Fennel has long, green, feathery leaves on celery-like stems. Both stem and leaves have a delicate, anise-like flavour and may be eaten as a vegetable. Flowers produce seeds that may also be used as a flavouring. Raw fennel stems and leaves may be added to salads. Fennel also can be used to flavour cheese, sauces, mayonnaise, and bread. Fennel is a traditional seasoning for fish. Use fresh fennel whenever possible to maximize flavour. Overcooking can cause fennel to lose its flavour.
