This heavenly salad is to die for. The salty halloumi combines perfectly with the sweet passion fruit dressing. I wish that all easy recipes were so tasty! So take your chance when passion fruits are in season or freeze some so that you can still enjoy this salad later in the year.
Ingredients For 4 servings
For the salad
250 g beetroot
250 g cherry tomatoes
200 g chayote (shushu)
200 g carrot
200 g halloumi
Handful basil
For the dressing
100 ml passion fruit juice
2 tbsp soy sauce
2 tbsp passion fruit seeds
1 tbsp sugar 1 tbsp lemon juice
1. Peel the chayote, carrot and beetroot and grate or chop them finely. Cut the cherry tomatoes in halves. Mix the vegetables and the basil leaves gently together.
2. Cut the halloumi into four equal pieces. Heat a little oil in a frying pan and bake the halloumi on low to medium heat until it’s golden, turn and also bake the other side.
3. Mix the passion fruit juice, soya sauce, passion fruit seeds, sugar and lemon juice for the passion fruit dressing.
4. Arrange the vegetables on a communal plate or individual plates. Place the halloumi on the bed of vegetables and serve with the passion fruit dressing.
