Lime juice is high in vitamin C and contains some antioxidants that promote health. Lime juice contains citric acid, an organic acid which gives a sour taste. Citric acid constitutes about 5 mg per oz of its juice. Citric acid is a natural preservative and antioxidants help dissolve kidney stones and smooth digestion. Consumption of fruits rich in vitamin C helps the human body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals from the human body.

Lime juice is an excellent meat tenderizer and flavour enhancer, and it is well known as an ingredient in the mixed drink known as the margarita. Lime also has many non-culinary uses, including the manufacture of perfumes, suntan products, and cattle feed (lime seeds are believed by some farmers to keep cattle’s coats shiny and to prevent the appearance of parasites such as ticks).
Storage
Limes can last for about one month if properly stored in the refrigerator. Keep the lime secured in an air-tight Ziploc bag to keep the most moisture and freshness sealed into the lime. Cut limes can be tightly wrapped in plastic and refrigerated for up to 5 days.
