Peanut Soup
Peanuts, called groundnuts in Zambia, are the second largest crop in the country and are produced by about half of the rural smallholders. But what to do with all these groundnuts? This recipe for a very simple peanut soup is a good way to start. Buy a jar of locally produced peanut butter and give it a try!
Ingredients For 4 servings
200 g peanut butter
2 onions
4 cloves garlic
1-2 tsp grated ginger
1 l vegetable bouillon
Optional:
Chili pepper
To serve
40 g bean sprouts
40 g peanuts
4 spring onions
1. Chop the onions and mince the garlic. Heat a little oil in a large pot and fry the onions, garic and ginger for 2 minutes.
2. Add the bouillon, peanut butter, pepper, salt and, if desired, chilli pepper. Bring to a boil and let it simmer for 5 minutes. Puree the soup with a (hand) blender until smooth.
3. Chop the spring onions finely. Boil water and pour the boiling water slowly over the bean sprouts so that they soften slightly. Garnish the soup with spring onions, bean sprouts and peanuts.
